Super Yacht Chef Menu planning

Super Yacht Chef Menu Planning

We'd recommend you start thinking about creating a sample menu plan for both crew food and guest food. This is to showcase what you like to cook and your skills and creativity in the galley.

Of course the issue is that for guest, boss or charter food, you don't yet know exactly what they'll want to eat. But by creating a sample 7-day menu for guests, you can still incorporate a range of cuisines and diets into it.

Where to Start

1Crew menu first — either do a selection of dishes for breakfast, lunch and dinner (with cakes, snacks, breads and biscuits under each heading), or plan a day-by-day 7-day menu.
2Then the guest or charter menu — build a sample 7-day guest menu that shows off a range of cuisines and diets you can cook.
3Scale to the yacht — on larger yachts, crew will expect a bigger variety of dishes. You won't be able to create the same range on a 35m as you would on a 75m, but crew on any size yacht still want to be well fed, so think healthy, nutritious, mouth-watering and varied food.
4Cover the range — create a list of salad ideas, soups, breads, cakes, snacks, beef, meat, pork, lamb, fish, and vegetarian/vegan dishes for lunch and dinner. This all depends on your crew — you might have an active, sporty crew who juice and eat low-carb, or crew who prefer meat-and-two-veg.
5Add theme nights — liven up the crew's week with theme evenings: Thai, Mexican, Indian, Italian, sushi, pizza nights, paella, curries and BBQs all go down well.
